One pot paprika chicken and potatoes

This is a perfectly simple dish for you to do when you have little time to prepare a meal when you are doing lots of other things.

So, to start you need to slice your potatoes, very thinly. The thinner they are the faster they will cook, which is good because you want them too cook at the same time as your chicken. Place them into oven proof bowl (that preferably has a lid, if you don’t have one with a lid, you can just cover it with tinfoil) and coat them with some melted butter, salt and, pepper.

 Next you need to butterfly your chicken. And by butterfly I mean, cut the chicken so it is completely level, this makes sure that it cooks at the same time, but don’t worry if it’s not perfect. Get some butter in a bowl, you don’t need a lot, just enough to cover the chicken you are using. Add to it some 1/2 tsp of garlic powder, a pinch of salt, a sprinkle pepper, 1 tsp of paprika and, cayenne powder to suit you. Mix this together and massage it into your chicken. This is a good learning curve for your partner if they are bad at foot rubs, they can practice and help you cook tea.

Once you (or your partner) have massaged the chicken breasts, place them on the top of your thinly slice potatoes and stick into the oven for 25-30 minutes. Having this meal covered means that all the good juices can stay inside and you can soak them up with some crusty bread, or poor them over your meal for a finishing touch.
