This is a super easy meal, but it’s something that makes every one happy on any type of day.
To start this recipe off add half a jar of pesto into a oven proof dish. Add some salt and pepper and some finely chopped onions. Slice your chicken, and put the chicken into the pesto mix. Cover this with tin foil and place into the oven for 25 minutes. But please make sure you check the chicken before taking it out of the oven.
Next butter your bread on both sides, with some of your remaining pesto add a thin layer to your bread.
Quick tip, don’t slice your mozzarella, tear it. It keeps the flavour in and helps spread it further. So tear your mozzarella and place it onto your bread. Add your chicken to the bread and add some fresh basil. Put this into your toastie maker.
For the salad, I used a mix leaf salad bag and added radish’s, cucumber, tomatoes and spring onions. As a little added extra I added some tortilla chips.
