This is the best thing for a Saturday night in when you don’t want to break your bank or your diet. I mean it’s not the healthiest recipe you will see on food realness but, it is better than getting a take away but still good enough to satisfy your food needs.
To start off pre-heat your oven to 180 degrees and add a thin layer of olive oil on top of your tin foiled baking tray.
Get your chicken breasts, and butterfly them, make sure that they are nice, thin and level. In three separate bowls you will need to have 2 eggs cracked and mixed together, 4 spoon fulls of plain flour and, in the third some crushed crackers. Make sure that your crackers are nice and small (breadcrumb like) and in the flour add 2 tsp of paprika, 1 tsp of chilli flakes and, salt and pepper to taste.
Now, coat your chicken fully in the seasoned flour, then dip it into your egg and finally, dip your chicken into the crushed crackers. Place your chicken on to your prepared tray and place in to the oven for approximately 20 minutes, or until they are cooked.
To serve i would personally suggest some brioche buns, mayo, hot sauce, mixed salad, tomatoes, cucumber and maybe some jalapeno peppers.
