This meal is perfect for any diet you may be on.
Before you do anything, you need to dry the skin on the salmon. Once it is dry add a nice thin layer of sea salt. In a non stick pan, add the slightest amount of oil and heat the pan up. The pan must be nice and hot before you place the salmon into the pan.
Once your pan is hot place the salmon skin down and let it cook and crisp up. Keep the salmon on the skin side for 2-3 minutes before flipping it over, where you should cook it for a longer 2-3 minutes.
Whilst the salmon is cooking place a dollop of soft cheese onto the plate and add sliced spring onions. Before taking the salmon out of the pan, make sure you flip it onto its sides and cook them a little before serving.
If you would like to turn this into a full meal this goes great with some stuffed mushrooms, asparagus or/and, a poaches egg. Also, if you would like to turn this into a sandwich, buy some bagels and spread the soft cheese onto the bagel and separate the salmon flesh from the skin and place them onto the bagel. You can also add the spring onions to the sandwich with some freshly cracked black pepper.
